Souvlaki with Tzatziki Sauce

Greek Souvlaki is a meat specialty made with tender cuts of some sort, beef, lamb, pork or chicken. In this recipe, the meat is marinated in a lemony olive oil mixture. Tzatziki is a traditional Greek yogurt-based sauce flavored with lemon, garlic, and crisp cucumbers.

2 pounds tender pork, beef, lamb or chicken
3 tablespoons olive oil juice
1 lemons
3 tablespoons oregano
1 tablespoon
salt and pepper

METHOD
Rinse the meat and bone and clear it of any hard gristle or muscle or fat. Cube it in large portions, season it and thread it on skewers. Pour the olive oil over the meat.
You can cook them under a hot grill for about 3 minutes on each side, basting them often and turning them once. The best results are achieved by barbecuing on charcoal. They take a little longer to cook, about 15 minutes, depending on the stength of the fire.
Before serving, pour over the cooked meat the lemon juice.

Tzatziki
1 medium cucumber, peeled and finely chopped 
1 cup plain yogurt
1 tablespoon olive oil
1 teaspoon fresh lemon juice or white wine vinegar
1 teaspoon minced fresh dill or oregano leaves
1 teaspoon minced garlic
salt

Put the cucumber in a strainer set over a bowl. Sprinkle with 1/8 teaspoon salt and drain for 1 hour. Put the yogurt in another strainer set over a bowl and drain for 1 hour. Combine the cucumber and yogurt in a bowl with the remaining ingredients and stir well. Cover and chill for at least 1 hour before serving.
